Healthy Chinese Soup
The Chinese red bean soup is a sweet #dessert soup usually taken after a sumptuous #Christmas dinner.
It is usually warm and tastes sweet and is plant based . This dish is suitable for #vegetarians , #vegans and #meat #enthusiastes .

Ingredients:
1 cup red beans (adzuki beans)
4 cups water
1/4 cup rock sugar (or regular sugar) or (Honey if you are Diabetic)
2 tablespoons coconut milk (optional)
1 teaspoon (coconut or vanilla essence) (Optional)
Dried orange or mango (Optional)
Instructions:
Rinse the red beans and soak them in water for at least 4 hours or overnight.
Drain the beans and place them in a pot with 4 cups of water. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the beans are soft.
Add rock sugar to the pot and stir until dissolved.
If desired, add coconut milk for a creamy texture and coconut or vanilla essence for extra flavour and dried candied orange or dried mango pieces for extra sweetness
Serve warm for a sweet and satisfying Christmas dessert.
