Healthy Chinese Soup


The Chinese red bean soup is a sweet #dessert soup usually taken after a sumptuous #Christmas dinner.

It is usually warm and tastes sweet and is plant based . This dish is suitable for #vegetarians , #vegans and #meat #enthusiastes .

Here goes the #recipe

Ingredients:

  • 1 cup red beans (adzuki beans)

  • 4 cups water

  • 1/4 cup rock sugar (or regular sugar) or (Honey if you are Diabetic)

  • 2 tablespoons coconut milk (optional)

  • 1 teaspoon (coconut or vanilla essence) (Optional)

  • Dried orange or mango (Optional)

Instructions:

  1. Rinse the red beans and soak them in water for at least 4 hours or overnight.

  2. Drain the beans and place them in a pot with 4 cups of water. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the beans are soft.

  3. Add rock sugar to the pot and stir until dissolved.

  4. If desired, add coconut milk for a creamy texture and coconut or vanilla essence for extra flavour and dried candied orange or dried mango pieces for extra sweetness
