A traditional Chinese dish with a tangy sauce, perfect for #Christmas. The sweet and sour flavour is loved by many, and it pairs well with steamed rice.
Ingredients:
2 fish fillets (tilapia, cod, or any white fish)
2 Fish Stock Cubes (Optional)
1/4 cup rice vinegar or Cider Vinegar
2 tablespoons soy sauce
2 tablespoons ketchup
1 tablespoon sugar
1 tablespoon cornstarch (for slurry)
1 red bell pepper, sliced
1/2 onion, sliced ( red or white onion)
1 tablespoon vegetable oil or Sunflower-oil or Groundnut oil or Sesame seed oil
A pinch of Salt or Sea Salt
1 – 2 table spoons dry ground pepper to taste (depending how hot and spicy you want it)
Instructions:
Season the fish fillets with salt ,fish stock cube and pepper, then lightly pan-fry them in vegetable oil over medium heat until golden and cooked through. Set aside.
In a small bowl, whisk together rice vinegar, soy sauce, ketchup, sugar, and cornstarch with 1 tablespoon of water to make the sauce.
In the same pan, sauté bell peppers and onions for about 2-3 minutes.
Pour the sauce mixture into the pan, stirring constantly until it thickens.
Add the fried fish back into the pan, coating it with the sauce.
Serve the sweet and sour fish with steamed rice or steamed vegetables (Broccoli ,carrots , sweet corn and peas ) for a delicious Christmas meal.
